Simple Swedish Pancakes

Anyone who attended my primary school can attest to this: the annual Sports Day never dissapointed. Multiple schools visiting from all around our province, competitive rugby and netball teams, uninterrupted sunshine from am to pm and well of course...pancakes. Always smooth, warm with a memorable cinnamon scent. They were often the first to be sold out and I still can't fully explain that pain in words. Thankfully, I've learnt to perfect them & bring those good old days back.



What's in them?

3 eggs

1 1/4 cups of milk

3/4 cup of wheat flour

2 heaped tbsp of sugar

1 tbsp butter

1 tsp vanilla essence

1/2 tsp salt

Topping:

1 tbsp cinnamon

2 tbsp sugar

Mix the two and sprinkle them on the pancakes for sweetening.


How to make them?

> In a bowl, beat the eggs and add milk.

> Add the vanilla, salt and sugar then stir in the flour.

> Stir the mixture with a balloon whisk until it is smooth.

> Melt the butter in a pan. Non-stick pans are just perfect for making pancakes :)

> Pour a 3/4 cup of the mixture into the pan to make a pancake.

> After approximately 10 minutes, lift the side of the pancake with a spatula. See if the surface is brownish.

> Flip, the pancake and fry the other side.

> Sprinkle the sugar-cinnamon topping, roll the pancake up and serve.
