Snacking is a great way to fill up between meals but sometimes when you have a busy career or study schedule it's draining to find the right snack to energize you during those hours. Challenged by my nephew's (10) sweet tooth, I made these peanut butter energy balls and he simply loved them. The best description he gave was that "they taste just like a Jungle Oats bar" and I knew then that his sweet tooth was finally at ease chewing something healthy. Over the years, I have been reinventing the original recipe and since I'm the 'chia seed bae' you can easily guess what the secret ingredient is.

Peanut butter is a good source of vitamins including Vitamin A which helps with eyesight and Vitamin C which boosts the immune system.
Dark chocolate may improve brain function and help prevent neurodegenerative conditions, such as Alzheimer’s disease and Parkinson’s disease.
Oats are high in fibre which lowers your odds of heart disease.
Chia seeds are rich in fibre and are a good source of protein. They are also help regulate blood sugar levels and support weight loss.
Honey contains antioxidants, which can protect the body from inflammation. Inflammation can lead to a variety of health issues, including heart disease, cancer, and autoimmune disorders.
Ingredients:
1 cup of Oats (quick)
1 cup of smooth Peanut Butter
3 tablespoons of Honey or Golden Syrup
1 slab of Dark Chocolate
1 teaspoon of Chia Seeds (optional)
Instructions:
Pre-cooking
Chop a third of the chocolate into small bits.
Cover a plate with aluminum foil/baking paper.
Cooking
- Heat the peanut butter in the microwave for 1 minute.
- Melt the remaining chocolate in the microwave for 1 min at a time until it's completely melted (put to the side)
- Pour the honey into the peanut butter and stir well. Now add the chocolate bits and chia seeds.
- Add about a half of the oats and stir. Add the rest until a thick dough forms.
- Scoop a tablespoon of the dough and roll it into a ball. Do this with all the dough. (Tip: wet your hands with water to prevent the mixture from sticking on our hands as you roll it)
- Dip the balls in the molten chocolate and place on the plate.
- Leave the energy balls in the freezer for approximately 20 minutes.

Storage instructions:
Store the energy balls in a food container and keep refrigerated.
