Spinach and Potato breakfast hash

There's an age-old saying that breakfast is the most important meal of the day. It literally is your first meal after hours of sleep and ideally should keep you powered until lunchtime. Now with that being said, we can all agree that it's tempting to skip it or have a bowl of kids cereal instead, just to save time. Having built that unhealthy habit myself, I felt challenged to make nutritionally-balanced, tasty and quick breakfast options that also make sense for my wallet because let's face it having an English breakfast out or at home is pricey. Needless to say the challenge has begun, join me! :)


What's in it for your body?

Eggs: are a great source of nutrients that improve brain health. Spinach: contains iron which helps the body to effectively use energy.

Potatoes: provide a good source of fiber, which can help prevent heart disease.


Multi-tasking will be key when making this breakfast hash and believe me it's doable.



Ingredients for a single serving :

  • 2 Potatoes (diced)

  • 2 large Eggs

  • 2 cups of Spinach (chopped)

  • 2-3 tablespoons of Olive Oil

  • Salt or seasoning of your choice.

Instructions:

  1. Boil the eggs for 10-12 minutes. Preheat the oven on grill.

  2. While the eggs boil, dice the potatoes and oil them in a bowl with the olive oil. I prefer to leave the potato skin on as it has B vitamins and iron

  3. Chop the washed spinach.

  4. Oven bake the spinach and potatoes side-by-side on grill level for about 15min. Observe the spinach and remove it when it's cooks. Place the potatoes back in the oven for the remainder of the 15min.

  5. De-shell the eggs and plate up the spinach & potatoes.

  6. Season and serve.

Time estimation : 15minutes

Grab your bento-box and pack some for work or class. Great way to avoid canteen and cafe temptations.
