Winter in my hometown is cruel and unmatched. Sometimes the weather will inspire you to do anything just to defrost. I normally don't buy or make soup but one day the thought of sipping a rich and creamy soup was too mouthwatering to ignore. Instead of baking the potatoes as commonly done, I boiled them... wouldn't change a thing.
Ingredients
2 large potatoes (peeled & chopped)
1 cup of grated cheddar cheese
1 cup of milk
2 tsp of garlic salt
2 cups of chicken noodle soup or chicken broth
Instructions
Boil the potatoes until they're soft and can be mashed, approximately 30 minutes.
Drain the excesss water and add milk. Mash the potatoes until smooth.
Pour half a cup of cheese and stir well into the potatoes.
Make a cup of chicken noodle soup, from the sachet or chicken broth and add to the mashed mixture.
Mix in the remaining cheese and add garlic salt.
Stir well for a few minutes and serve.
