Green spaghetti & sauteed mushrooms

I had to try something new...It was another Sunday and my pallet was game for something fresh, so I took everything out my pantry and yup you guessed it, this tasty vegetarian dish was created.

Don't let the green scare you away, in this case green is palatable along with all the nutritional value we need it for. The spinach and avocado pasta sauce give your immune system and brain a boost of energy.With the sautéed mushrooms, you will not even miss the meat options. It is yummy.




Ingredients:

- 250g white mushrooms

- 250g pasta spaghetti

- 2 tablespoons Garlic & herbs seasoning

- 3 tablespoons of olive oil or butter

- 4 large leaves of spinach

- 2 small avocados

- 1 teaspoon of salt


Instructions:

- Boil water in a pot and add the pasta. Cook the pasta for approximately 15-20 minutes on high heat.Thereafter, drain the water and add a tablespoon of oil and a generous pinch of salt to taste.

- In a pan, add 2 tablespoons of olive oil or butter and place the heat on high. Then, add the mushrooms and fry them until brown and crispy on both sides. Add the garlic & herbs spice.

- For the green sauce, add a cup of water and the spinach in a blender and blend until it's liquid. Now, add the avocados and a pinch of salt to taste. Blend until it's a smooth thick sauce. You may add a bit of salt if you wish (the avocado is infused with water and should remain fresh for about 2-3 hours).

- Mix the green sauce with the pasta.

- Dish it up and add the mushrooms separately on top.
